It is said that the Red rices are highly valued as they had the power to redress the imbalance in the Tridosha (In the ancient Indian system of Medicine, the fundamental structure of human body is composed of the three biological humors or Tridosha as they are called and the correct balance of these leads to a healthy body and thus a healthy mind.)
This variety from the North India is slightly fat & short, glutinous in texture having a nutty flavour.
If you intend to cook it like regular grain, we suggest you pre-soak this rice for about 1 hour prior to cooking. Alternately dry roast it slightly before cooking. The time taken for cooking will be longer and the amount of water required will also be slightly more than the regular polished white varieties.
Another way to use it would be to make kheer (sweet rice pudding) or custard.
Soak them overnight alongwith Urad Dal, grind them to paste and allow for fermentation. Make healthy and nutritious Idlis/ Dosas from this batter.
